Karen and Edgar Carrillo founded Pacayal Coffee on the idea that a crisis doesn't have to mean the end. Chinacla doesn't get talked about much outside of competition circles, but that's starting to change.

 

About the Producers:
When coffee farming in Honduras hit a crisis point in 2013, a lot of farmers walked away. Karen and Edgar Carrillo didn't. They built Pacayal into a cooperative now 134 members strong, more than half of whom are women. El Rodeo is their farm in Chinacla, La Paz, restored and now part of a region that regularly places in the Cup of Excellence. Through Pacayal, they plant over 5,000 trees a year to protect the watershed their community depends on.

Why We're Excited
Melon and dark cherry hit right at first sip, bright and a little unexpected. Brown sugar follows, carried by a syrupy body that lingers in a way that's hard not to notice. As it cools, a cola-like quality settles in. That's where the vanilla and warm spice come from.

How We're Brewing
On the Aiden, we've been using the medium roast guided brew. It runs a little cooler and pulls a tighter ratio, which lets the body come forward without losing the sweetness. At home, a V60 at 1:16 with a medium coarse grind and a total brew time around 3 minutes works beautifully. Works just as well out of a batch brewer if that's your morning routine.

Unopened bags stay fresh for about six months in a cool, dark place. Once opened, use within a week for the best flavor. We recommend storing beans in an airtight container rather than the fridge.

Yes. Whole beans hold their flavor longer because grinding increases exposure to oxygen. For maximum freshness, grind just before brewing.

No. Our coffees contain no added sugar, are naturally gluten-free, and lactose-free.
