Introducing the Downeast Coffee Roasters Lab Series, designed to spark curiosity and deepen appreciation for innovation in coffee.

The first ever release in the Lab Series is our Passion Project, a perfect introduction to this new line focused on innovation. The focus of this coffee is an anaerobic honey passion fruit co-ferment grown across three Colombian regions and processed at El Vergel Estates. It undergoes a 24-hour cherry fermentation and a five-day anaerobic co-fermentation with yeast and passion fruit to build sweetness and complexity. After ten days of mechanical drying and stabilization in GrainPro bags, it delivers a vibrant cup with notes of passion fruit, pomegranate, citrus, and brown sugar that highlight Colombia’s innovative processing and rich terroir.

The second component is a regional selection of washed organic coffees from the Asociación Regional La Cascada de Bordones, a group of smallholder farmers in Pitalito, the largest coffee-producing municipality in Colombia. Founded in 2003 and named after the nearby Bordones Waterfall, the association benefits from Huila’s volcanic soil and microclimates that shape the region’s bright, flavorful coffees.

Why We're Excited: In the cup, expect bold tropical fruit flavors reminiscent of a pack of tropical Skittles, balanced by warm hazelnut notes. A velvety milk chocolate body rounds out the experience, creating a cup that’s truly one of a kind and absolutely worth your attention
